Crock Pot Tomato and Basil Cream Cheese Chicken

I’d like to share a recipe my husband and I created through experimenting – Crock Pot Tomato and Basil Cream Cheese Chicken. I love cooking with a crock pot – it’s convenient and doesn’t heat up an apartment like the oven does on hot summer days.

Crock Pot Tomato and Basil Cream Cheese Chicken

4-5 Chicken Breasts (I used frozen chicken breasts)
1 can diced tomatoes, not drained (I like “no salt” added tomatoes)
1 packet McCormick Gourmet Chicken Penne seasoning mix
1 packet Grill Mates Tomato, Basil and Garlic seasoning mix
1 package of Greek Yogurt Cream Cheese (or Neufchatel cheese) (8 oz), broken into cubes or chunks
1 package of Neufchatel cheese (8oz), broken into cubes or chunks

1. Spray crock pot with cooking spray or place a liner in crock pot
2. Combine chicken breasts, tomatoes and both seasoning packets in crock pot
3. Cook for 3 hours on high
4. Turn crock pot to low and cook for 2 more hours
5. When there is about an hour of cook time left, remove liquid from crock pot until you reach your desired consistency (I usually take out 1 to 1 1/2 cups of liquid and use it to make rice or quinoa to serve as a side dish) and add in the cream cheese/Neufchatel cheese.

I like to serve this chicken on a bed of quinoa, with a salad on the side.

This recipe is pretty flexible – change the spices if you want to, use more or less cheese depending on how creamy you like the dish to be. Also, please note that since I used frozen chicken breasts, the cook time is longer than it would be for thawed chicken breasts.

Note: I like Neufchatel cheese because it is lower in fat than cream cheese. If you can’t find Neufchatel cheese, cream cheese would work just as well.

    I adore crockpot recipes, haha. It makes life so much simpler. Few things beat waking up to, or coming home to a nice, hot, already-prepared meal! 😀
