Friday Recipe Link-up and Turkey Meatloaf Muffins

Happy Friday! I’m so exited to announce that I’ve joined a Friday recipe link-up group! This week’s theme is picnic! Be sure to check out their recipes and feel free to add yours as well. As a quick side note, my husband and I had a great “picnic” date a couple of weeks ago. We watched a professional soccer game and stopped to get Indian food on the way to the game. We got the food to-go and ate it on the grass by the parking lot before the game started. Fun and delicious!

Today I’d like to tell you about a recipe for Turkey Meatloaf Muffins that my amazing husband found. We tried it out and really liked it. The muffins are easy to take to work for lunch and would just as easily slip into a picnic basket. The recipe is from Jamie Eason and is featured on You can view the original recipe here.

The recipe makes 12 but we doubled the recipe so we’d have extras for lunch during the week.

Turkey Meatloaf Muffins (from Jamie Eason, featured on

2 lbs ground turkey or chicken (we used ground turkey)
3 egg whites
1 cup quick cooking oats
1/2 tsp ground cumin
1/2 tsp dried thyme
2 tsp dry yellow mustard (we used mustard flour)
2 tsp black pepper (we used mostly white pepper with a little freshly ground black pepper)
2 tsp chipotle pepper spice (we didn’t have any of this)
1 tsp salt
2 tbsp garlic powder (2 cloves minced) (the garlic flavor was pretty strong so next time I’ll reduce the amount of garlic powder a little bit)
1 small onion (finely chopped)
2 celery stalks (finely chopped)

1.Preheat oven to 375 degrees.
2.Spray muffin pan with canola or olive oil (we used muffin liners)
3.Mix all your ingredients together in one large bowl.
4.Roll the mixture into balls and place in muffin pan. Muffins should be about the size of a racquetball.
5.Bake for 40 minutes

Note: We stuck 1/3 of a piece of Laughing Cow Cheese in the middle of a couple the muffins before baking as an experiment – fantastic!!

The muffins were delicious. I ate them on their own the first night and later in the week, crumbled one in some scrambled eggs with peppers and onions. Yum!

    Yum! I love meatloaf muffins! This looks like a fantastic recipe- I might try it out for dinner later since I still don’t know what I’m making 😉

  2. I love this idea! Turkey is a great substitute for beef and I use it more often now, so I’m always looking for more recipes since I don’t have that many. I will definitely have to try this. And I LOVE laughing cow cheese so I’ll take your advice there too 😉 So glad you’re linking up!

    Yeahhhh, meatloaf muffins! I’ve made ginormous meatballs in my muffin tin, but not meat-muffins yet! (This is going to have to change. I think I almostttt have all of the ingredients that this requires.) I’ll have to whip some up sometime!
