“Touchdown” Mini Crustless Quiches

Happy Friday! Today I have a mini crustless quiche recipe to share with you. In honor of this week’s theme, I’ve named the quiches “Touchdown” Mini Crustless Quiches. 🙂

“Touchdown” Mini Crustless Quiches

9 large eggs
1 cup sliced bell peppers and onions (I like to use frozen bell peppers/onions and just heat up the amount I need)
1/2 cup – 1 cup sliced ham (depending on how much ham you like with your eggs)
2 Tbsp water
sharp cheddar cheese, grated
salt and pepper to taste

1. Preheat oven to 350 degrees Fahrenheit
2. Line muffin tin with liners or spray with cooking spray
3. Combine eggs, water, bell peppers, onions, ham, salt and pepper in a bowl
4. Distribute egg mixture among 12 muffin tins
5. Sprinkle with grated cheddar cheese

Bake for 23-28 minutes or until eggs are firm or a toothpick comes out clean. Feel free to add spinach, sausage, bacon, other types of cheese, etc!

    I love the idea of mini quiches! The regular size of quiche is to much for two people. This is perfect and I can freeze them… score!

    Yum! Quiche is quickly becoming a new favorite of mine! This will definitely be on my menu…tomorrow haha! Can’t wait for the start of season! 🙂

    Yay! 😀 I love making non-muffins/cupcakes in my muffin tin! Makes me feel like I’m getting more of a use out of em’! I’m going to try this with a different meat variation (only because I can’t eat ham); it looks delicious! :]
