Watermelon Birthday Cake

Happy Friday! I’m linking up again this week with Annemarie from The Fit Foodie Mama, Esther from Chocolate Runner Girl, Farrah from Fairyburger and Montana from Pretty Lil Mudder to bring you healthy recipes. This week’s theme is “Dessert Heaven”. Please be sure to check out their recipes and feel free to add yours as well.

My body doesn’t handle sugary desserts very well so for my birthday this month, my sister-in-law’s family made me a birthday cake completely out of fruit – so delicious!

Watermelon Birthday Cake

1 large seedless watermelon
1 cup blueberries
1 – 2 cups strawberries, sliced
1 cup black berries
1/2 cup raspberries

1. Cut the top and bottom off the watermelon
2. Cut three “tiers”, each about 3 inches thick
3. Remove the rind from the three tiers
4. Stack the tiers on top of one another
5. Decorate tiers with berries

A big thank you to my sister-in-law’s family for making me such a special birthday cake!!

I’m not a fan of super-super sweet things either. 😛 I somehow haven’t purchased a single watermelon this summer, but ahhh! This looks so delicious!

When I was younger we moved in the middle of the summer right around my younger brother’s birthday. My mom did not have time to make him a cake so we got him a watermelon and put candles on it. I will have to show his this, he will get a kick out of it!
Hope your birthday was fabulous!!! Yay Aug birthdays 🙂
