Foodie Friday: Crock Pot Sweet Potato and Quinoa Turkey Chili (From Iowa Girl Eats)

I LOVE Crock Pot meals – they’re a perfect solution to having healthy, home-cooked food after a super busy day. Since it’s October now (and fall is my favorite season!!) I wanted to share a chili recipe with you – Iowa Girl Eats’ Crock Pot Sweet Potato and Quinoa Turkey Chili. If you haven’t tried any of Iowa Girl Eats’ recipes, you are missing out!

Crock Pot Sweet Potato and Quinoa Turkey Chili (from Iowa Girl Eats)

1 lb ground turkey
1 large shallot or 1 small onion, chopped
3 garlic cloves, minced
salt and pepper
3 cups chicken broth
28 oz can crushed tomatoes
15 oz can baked beans
1 cup uncooked quinoa, rinsed (this is important, don’t forget to rinse the quinoa or it will taste bitter!)
1 large sweet potato, peeled and chopped small
2 Tablespoons chili powder
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon red chili pepper flakes
Toppings: shredded cheese, chopped avocado, tortilla chips, green onions

1. Combine the ground turkey (season with salt and pepper) with the chopped shallot or small onion in a pan and cook until turkey is no longer pink.
2. Add minced garlic and cook for 30 seconds to 1 minute. Add contents of pan to crock pot that has been sprayed with cooking spray (or use a crock pot liner).
3. Add remaining ingredients (other than toppings)
4. Cook on high for 3 hours or on low for 5-6 hours. Serve with toppings. Iowa Girl Eats notes that you may need to add more chicken broth when reheating.
