Foodie Friday: Coconut Curry Veggies

Happy Friday!! I’m linking up again this week with Annemarie from The Fit Foodie Mama, Cassandra from Powered by Bling, Esther from Chocolate Runner Girl and Farrah from Fairyburger to bring you healthy recipes. I’ve tried over the last few weeks to incorporate more vegetables into my diet. Here’s an easy recipe to add some variety to your veggies:

Coconut Curry Veggies

1 red bell pepper, sliced into strips
1 zucchini, sliced
1 tbsp coconut oil
1/2 tsp hot madras curry powder
1/4 tsp garlic powder
salt/pepper to taste

1. Heat coconut oil in a pan
2. Add bell pepper and zucchini, cook for about 5 minutes
3. Add spices, cook until peppers and zucchini begin to soften

Note: I like my vegetables a little crisp. Cook until the veggies reach your desired level of tenderness.
